Our processing runs are typically organized on a bi-monthly basis to ensure that every beef order is handled fresh and with the care it deserves. After your reservation is confirmed, we provide you with a detailed cut sheet that outlines all available processing options. This document serves as your personalized guide for selecting the ideal assortment of steaks, roasts, and other specialty cuts based on your culinary preferences. You have the option to have your beef delivered to your preferred local butcher, or you may opt for our highly recommended partner. Once your beef is processed, the local butcher supplies us with a "hanging weight" measurement, which generally falls between 275 lb and 390 lb per half, depending on the live animal's size. On average, you can expect to receive about 65% of this weight as your finished "take-home" meat. About three weeks after processing, you will be contacted to pick up your order, giving you ample time to plan your perfect meal.
